Savory Slow Cooker Chuck Roast

When prepping my meals for a longer work trip, at least one of my entrees will be made in a slow cooker.  Usually it will be a meat dish so that I’ll have an abundance of a protein source to split up between meals.  I’ve tried Marcus’ stupid easy chili verde redux, the slow cooker baby back ribs, as well as the chili lime crock pot chicken.  Just recently, I attempted the Savory Slow Cooker Chuck Roast from Paleopot.com and it has quickly made its’ way into my rotation.  Aside from the roast, the ingredients are likely to already be in your pantry.  And the roast comes out super tender and full of flavor!

In the original recipe, they halve a butternut squash to steam inside the slow cooker along with the roast.  However, I just don’t trust myself with a knife and a thick shell squash.  If you have no issues, feel free and let me know how it goes.  It’s a great way to get your entire meal done in one pot!



  • 3 to 5 pound chuck roast
  • 2 to 3 pound butternut squash, halved and seeded
  • One 8 ounce can of fire roasted tomatoes (diced or pureed)*
  • 4 cloves of garlic, cut in half
  • 1 tsp cumin
  • 1 tsp paprika
  • 2 tsp onion powder
  • t tsp black pepper
  • sea salt to taste


* I couldn’t find an 8oz can so I just used a 14oz can and it works just as well.
